Our forms of Parmigiano Reggiano are available based on different maturations: 12, 15, 18, 24, 30, 36, 60, 70. Each maturation has different organoleptic properties.


The 12/15 month maturation allows you to enjoy a cheese with a soft, tender texture with a milky flavour, ideal for aperitifs, carpaccio, easy to melt and make parmesan creams, it is a valid alternative to fresh cheeses that we find on the market with an impeccable authenticity equal to to any other type of cheese.


Light and delicate, Parmigiano Reggiano aged for over 18 months is characterized by a light texture and a marked lactic base. Ideal for your aperitif, especially if combined with raw vegetables.


Parmigiano Reggiano aged over 24 months is in balance between sweetness and flavour. Grainy, crumbly and with a typical straw yellow colour. The medium maturation makes it very versatile in the kitchen. Ideal accompanied with first courses, soups and veloutés.


Crumbly, tasty and with a strong aroma: Parmigiano Reggiano aged for over 30 months is a true triumph of taste. The long maturation makes it highly digestible. It finds its balance in the company of second courses and structured red wines.


The Parmigiano Reggiano matured for over 60 months RISERVA SPECIALE has an amber and grainy texture. Characterized by complex scents: woody, smoked, citrus and spicy. Ideal together with cured meats, jams, honey or drops of balsamic vinegar.


The Parmigiano Reggiano aged for over 70 months RISERVA SPECIALE is characterized by a strong flavour, ideal for special occasions. Grainy and crumbly, it recalls hints of undergrowth, dried fruit and spices. To be accompanied with sweet and sour mustards and well-structured honeys: Acacia, Linden or Chestnut.

AGEING

Our Parmigiano Reggiano is characterised by a hard, cooked and slow maturing paste, obtained from raw, semi-skimmed, high quality 100% Italian milk, with no heat treatment and no additives. Thanks to this milk with high levels of casein and fat, it is possible to produce a Parmesan cheese that remains sweet and pleasing to the palate even after long ageing.

MODE OF PRESERVATION

We recommend keeping Parmigiano Reggiano at a temperature between 4°C and 8 °C.
