PRODUCTS

Parmigiano Reggiano DOP is produced in the provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the Reno River and Mantua to the right of the Po river. In this area, all stages of production occur, from the breeding of the cows to the packaging of the product.
Parmigiano Reggiano is made from milk, salt and rennet without the addition of additives or preservatives.
Yes! Parmigiano Reggiano is naturally lactose-free, independent of the seasoning period.
Yes! The rind of Parmigiano Reggiano is edible because the cheese contains neither additives nor preservatives and the rind does not receive any kind of preservative treatment. The rind is formed
by dehydration of the surface layer of the cheese and is completely natural.
Fresh, pre-packaged or vacuum-packed Parmigiano Reggiano must be stored in a refrigerator at a temperature of between 4 and 8°C. If vacuum-packed, Parmesan generally has a shelf life of 6 months. Once the packaging has been opened, or if you buy a piece of cheese cut directly from the wheel, contact with the air must be avoided otherwise it will harden, dry out and a layer of mould may form. The use of glass or plastic containers or wrapping Parmigiano Reggiano in food-grade film is recommended.
It is not recommended to freeze Parmesan cheese: the structure of the cheese paste would change, losing its friability characteristics.
On 26 February 2008, the European Court of Justice ruled that, in the territory of the European Union, the term 'Parmesan' is evocative of the PDO Parmigiano Reggiano and for this reason this term must be reserved for authentic Parmigiano Reggiano produced in accordance with the production specifications.
Parmigiano Reggiano and Grana Padano are aged cheeses made from Italian cow's milk, processed raw (unpasteurised) with animal rennet. The differences between Parmigiano Reggiano and Grana Padano result from the production areas, the kind of feed given to the cows, the branding of the wheels, the producers and their requirements, and taste and granularity.
