We would like to guide you in the conservation of this product through a few small tricks in order to keep all its organoleptic properties intact. First of all, it is necessary to distinguish vacuum-packed pre-packaged Parmigiano Reggiano from that cut fresh or taken out of the packaging. Two distinct cases, from which different preservation methods follow.
VACUUM-PACKED PRE-PACKED PARMESAN CHEESE
The purchased product must be stored in a refrigerated environment with a temperature between 4 and 8 °C. Make sure the case is intact, sealed and not exposed to oxygen. You can store it in the refrigerator for several months and you can find out the exact date by reading directly on the packaging.
PARMESAN CHEESE CUT FRESH OR TAKEN OUT OF THE PACKET
The storage temperature is the same as for vacuum-packed pre-packed, but we recommend storing it in a glass or plastic container to prevent the fatty part of Parmigiano Reggiano from absorbing the smells of nearby food. Alternatively, you can wrap it in food-grade film. Optimal humidity levels maintain the organoleptic
properties of the product.
Our advice is to check its condition periodically. Storage days vary according to the type of ageing: for eighteen months it is about 15 days, in other cases even a month.
Should mould appear, simply remove it gently using a knife. Parmigiano Reggiano is never thrown away!
